Chinese Style Turkey Burgers with Oriental Sesame Slaw

Most people who know me realise I’m nearly always up for a culinary challenge, so when Lee Kum Kee invited me to take part in their Summer Carnival Campaign I was delighted. The challenge ? To devise a recipe with a summery barbeque feel using LKK sauces. My starting point to a get a sense of what LKK produce was having a look at their deliciously versatile sauces in action.
The challenge was a perfect brief for the Kitchen Shed as we love alfresco summer food. Whilst I eagerly awaited delivery of the parcel I had a barbecue recipe in mind (ironically really with all of the recent rain) and when the Char Siu Barbecue Sauce arrived I knew I had to try it.

I decided to use turkey mince as I wanted something economical which was also easy to use alongside authentic Chinese flavours. Char Siu Sauce pairs well with pork and chicken and I was sure it would go well with the turkey mince. Generally, I tend to avoid turkey burgers as they can be dry and tasteless, especially when compared to a succulent beef burger.
The Char Siu Sauce didn’t disappoint – these lovely moist turkey burgers are full of flavour which is livened up even more by the spices in the sauce. I used Soy Sauce to balance the sweetness of the honey and added fresh ginger and Chiu Chow Chilli Oil for extra heat. A word of warning: we love hot chilli here at the Kitchen Shed but I only used 1 teaspoon of Chiu Chow Chilli Oil in the burgers.
To complete the ultimate Chinese Style Burger experience I made an Oriental Sesame Slaw and a Chiu Chow Chilli Mayonnaise and served them all in a Ted’s Roll.
I’ve given Ted’s Rolls a makeover too as I brushed them with an egg wash and coated them with sesame seeds – they make a perfect BBQ bun.

These burgers are so easy to make as you simply mix the ingredients together and shape. Turkey mince is not readily available around here in Brittany so I minced my own using about a third thigh meat two thrirds turkey breast strips – thigh is still lean and very flavoursome.

We love a home-made coleslaw here in the Kitchen Shed and I thought the Oriental Sesame Dressing was perfect for experimenting with to find an alternative to the traditional mayonnaise base often found in coleslaw dressings. I still wanted a creamy dressing so I used peanut butter as a healthy alternative.

You can prepare Chinese Style Turkey Burgers, Oriental Sesame Slaw and Chiu Chow Chilli Mayo ahead of your event and keep in the fridge until needed – the prepared burgers freeze well too.

Chinese Style Turkey Burgers with Chiu Chow Chilli Mayo and Oriental Sesame Slaw

Serves: 6

Chinese Style Turkey Burgers

Ingredients
  • 500 g minced turkey steak or thigh
  • 25 g fresh breadcrumbs
  • 2 spring onions chopped
  • 1 tablespoon freshly chopped parsley
  • 1 tablespoon freshly chopped basil
  • 1 or 2 teaspoons Lee Kum Kee Chiu Chow Chilli Oil
  • 3 tablespoons Lee Kum Kee Char Siu Sauce
  • 1 tablespoon Lee Kum Kee Soy Sauce
  • 2 cm piece ginger – grated
  • A pinch of salt and pepper

Chiu Chow Chilli Mayo

  • 6 tablespoons mayonnaise (I used light mayonnaise)
  • 2 teaspoons Lee Kum Kee Chiu Chow Chilli Oil

Oriental Sesame Slaw

Dressing:
  • 4 tablespoons Lee Kum Kee Oriental Sesame Dressing
  • 1 tablespoon smooth peanut butter
  • 1 teaspoon muscovado sugar
  • 2 tablespoons lime juice
  • 1 teaspoon Lee Kum Kee Chiu Chow Chilli Oil
  • 2 teaspoons grated ginger
  • 1 tablespoon sesame seeds
  • Optional: 1 tablespoon freshly chopped garlic chives or chives
Slaw vegetables:
  • ½ small white cabbage shredded
  • 1 red onion, halved and finely sliced
  • 2 carrots julienned or grated

 

You will need:
Make your turkey burgers:
  • Place all the burger ingredients in a bowl and mix well.
  • Divide into 6 burgers, shape by hand or use a 9 cm ( 3 ½ inches ) food ring or pastry cutter for an evenly shaped burger. ( I used my ancient Tupperware burger press )
  • Place in the fridge for at least 30 minutes to firm up or you can freeze them at this point.
Mix your Chiu Chow Chilli Mayo:
  • Simply whisk the Chiu Chow Chilli Oil with the mayonnaise.
  • Keep in the fridge until required.
Make your Oriental Sesame Slaw:
  • Whisk the dressing ingredients together and pour over your slaw vegetables.
  • Mix well and refrigerate until required.
Cooking & assembling your burger:
  • Cook your burgers on a BBQ or fry in a pan with a little oil on a medium heat for 5 to 6 minutes on each side until completely cooked through.
  • Leave to rest for a couple of minutes while you toast your BBQ buns.
  • Assemble your burger by adding a layer of Chiu Chow Chilli Mayo, lettuce, the turkey burger and topping with a generous helping of Oriental Sesame Slaw.
  • Enjoy!

  1. Wow! I’ve finally made these after meaning to do it all summer…absolutely delicious! I’m not a fan of the traditionnal mayo laiden slaw, but this Asian invention is amazing! Thanks for sharing 🙂
