Sausages are cooked with vegetables and beans in a rich tomato sauce infused with paprika.
Definitely the tastiest midweek family meal whilst also easy on the pocket.
You can make my delicious sausage and bean casserole using basic store cupboard ingredients – it’s so simple to throw together.
Start by browning the sausages and add them to your slow cooker. Then all you have to do is add the other ingredients and your slow cook does the rest.

What Ingredients do I need ?
A few staple ingredients and vegetables deliver a hearty, satisfying Slow Cooker Spicy Sausage Casserole.
- Sausages – I used Cumberland but we also love using Richmond meat free sausages. Lincolnshire, chipolata or Toulouse, it’s entirely up to you. Any good quality sausage you have to hand will work just fine.
- Onions – I’ve used red onion for its sweetness but feel free to swap out for brown onion.
- Vegetables – I’ve used carrot, celery and red peppers cut into chunks.
- White beans – I’ve used a mix of cannellini and butter beans. Haricot or even a Borlotti still deliver the goods.
- Garlic – I’ve used freshly crushed cloves but garlic puree works well.
- Tomato puree / paste – adds extra richness to the tomato sauce.
- Stock – I’ve used a beef stock pot mixed with hot water. Equally, swap for a stock cube – beef, chicken or vegetable.
- Seasoning – I’ve used freshly ground black pepper and sea salt.
- Herbs – I’ve used freshly chopped thyme. If using dried thyme half the amount.
- Paprika – I’ve used regular paprika to add a spicy sweet and peppery taste.
How to make Slow Cooker Sausage Casserole
Making sausage casserole in your CrockPot couldn’t be easier ! Just a couple of simple steps before simmering in the slow cooker. For full details see the recipe card at the bottom of the post.
- Brown the sausages. Browning the sausages at the beginning adds lots of extra flavour. Plus, it firms up the skin a little which helps prevent the sausages falling apart during cooking.
- Add to the slow cooker along with the vegetables and beans.
- Add the rest of the ingredients and stir.
- Pop the lid on and cook.
- Serve with crusty bread.

Slow Cooker Sausage Casserole
Equipment

Ingredients
- 8 – 12 thick sausages of your choice – I used Cumberland. Richmond meat free work well too.
- 1 tbs oil
- 2 red onions sliced
- 3 carrots thickly sliced
- 3 sticks celery thickly sliced
- 2 red bell peppers deseeded and cut into large chunks
- 400 g tin butter beans drained and rinsed
- 400 g tin cannellini beans drained and rinsed
- 3 cloves garlic – crushed
- 2 tablespoons tomato puree / paste
- 1 stockpot or cube or 1 tablespoon of vegetable stock powder – I used a beef stockpot
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 teaspoons paprika
- 2 teaspoons fresh thyme chopped or 1 teaspoon dried thyme
- 500 g passata / sieved tomatoes
- 250 ml hot water
Instructions
- Heat oil in a frying pan, brown sausages and transfer to your slow cooker.
- Add sliced onions, carrots, celery and peppers along with butter beans and cannellini beans to the slow cooker.
- Add the garlic, tomato puree / paste, thyme, paprika, stock pot and passata.
- Pour 250 ml hot water into the slow cooker.
- Stir, pop the lid on and cook for 4 hours on high or 8 hours on low.
- Serve with crusty bread, creamy mash or roast potatoes.

- For US cup measures, use the toggle at the top of the ingredients list.

I don't have a slow cooker, but I cooked at low heat for a long time, and it turned out delicious. I loved the color. Paprika gives a delicate yet defined flavor. I added a pinch of cayenne pepper and OMG! This is definitely my kind of recipe!
